Wild Game Recipe: Soy-Sesame Grilled Venison
Hitting your primal cuts with heat from a backyard grill or a backcountry campfire is a beautiful thing—a beauty that lies in primitive simplicity.
While there’s nothing wrong with the tried-and-true approach of plain old salt and pepper for seasoning your venison steaks, this recipe keeps it simple while adding rich flavors with ingredients that are easy to keep on hand.
My most recent application of this recipe was on a barren ground caribou taken from the Arctic tundra, but it works great with venison from any wild beast.
INGREDIENTS
INSTRUCTIONS
1. Marinate venison steak for 2-4 hours in a bath of two parts soy sauce to one part sesame oil.
2. Season marinated steak on all sides with equal blend of garlic powder, onion powder, ground black pepper and kosher salt.
3. Grill steak to internal temp of 120. Wrap in tinfoil and rest 5 minutes before slicing and serving.
Optional: Sprinkle fresh thyme over sliced steak.
